On Mondays we meal prep.

If there is one thing that I have learned from my journey its that food preparation is the key to success. Having food ready to heat and eat when you are starving is best! I like to meal prep for a couple days at a time. I make two dishes that I basically eat for breakfast, lunch and dinner.

Today I made my most favorite Paleo dish in the world - no really it's true!! Even my kids have no problem gobbling this dish up! I made PaleOMG's 5 ingredient pizza spaghetti pie. It's super simple to make and oh-so-tasty! Trust me!! 😁

Nuke the spaghetti squash. You can also roast it, but that takes forever!

Cook up Italian sausage, then put marinara sauce.

Put squash, Italian sausage mixture and three eggs in a bowl and mix, mix, mix.

Then put in a baking sheet and baked uncovered for 45 minutes at 375 degrees.

The hardest part is waiting for your masterpiece to finish! I like to eat with a simple spinach salad with balsamic dressing.

Yummy!

I hope you all enjoyed my first  meal prep Monday post! What and how do you prepare for a successful week?

Welcome!

If you're reading this, welcome to my blog! My name is Ivy and I've been inspired to start blogging again. Why? Well, let's just say I've fell of the bandwagon and need something to keep me going and accountable. Ugh...yes, the struggle is real.

So a little history about myself. I've been cross fitting and eating Paleoish for a little over 2 years. I was learning the balance between working out and eating healthy. I lost a fair amount of weight, gained a ton of lean muscle and strength. I was the fittest  I have ever been in my life...then it happened. After a really hard workout I decided to PLAY around doing rope climbs and I injured my Bicep! That led me depression, emotional eating, and weight gain. Fast forward to today. That was 6 months ago and I'm still limited on overhead exercises that I can do.

It sucks that I've gained weight and lost a lot of strength, but two weeks ago I decided to reclaim my life!! So what if I have an injury. I'm not going to let it reverse all the hard work I have done! It's amazing how eating good and exercise can make you feel. I feel great and I'm ready to take control once again. Hold on tight a d enjoy the ride!!! It's going to a amazing.

Till next time,
Paleoish Princess
